Say Cheese! Sargento Ultra Thin To Be Exact









So awhile back I joined Influenster (if you don't know what that is you can check it out here) I played around with it for a bit & got all my social network sites linked & then just kind of forgot about it for several months, until I got an email saying I had qualified for a voxbox 
(which are pretty much the best things ever & really the whole reason I signed up in the first place). 
I got my very first voxbox from Influenster in the mail for Sargento Ultra Thin cheese. 


I was really excited when this finally came in the mail but I was a bit confused because I knew they weren't shipping cheese to me (that would be gross) but the box was way big for just a coupon.


That's because this awesome cooler bag was in there! 
I get really excited over little things & I am in love with this little cooler bag (which is actually pretty roomy inside) 


I went to the store & used my coupon to get my free Sargento Ultra Thin cheese, I pretty much knew I would like it because I've always been a fan of Sargento but the ultra thin slices are even better! We got Pepper Jack because that's what the hubby wanted but I plan on using my $1 off coupon for some swiss (My fav). Now I'm just trying to learn what I do next with Influenster (lots of follow up stuff but totally worth it for free cheese). I hope I qualify for another voxbox soon because I think I'm hooked on them (& the cheese, which is actually almost gone)

Mexican Shepherds Pie



Ok, I promised you guys a recipe yesterday so here it is... 
It's one of my absolute favorite meals,  my mom makes it for me every time I visit home (because mine never taste the same as it does when she makes it) 

I don't have exact measurements for this recipe (I know, I'm horrible) but I promise it's super easy.

First you need ground beef (I usually use about a pound or so), brown it in the skillet with taco seasoning.
Spread that out in the bottom of a baking dish (about a 9 x 13 is good) 
Open a can of corn & spread that on top of the ground beef.
Now make some mashed potatoes, you can use real potatoes or you can use the flaky kind, whatever you prefer.

Now that your mashed potatoes are made, spread those out on top of the corn.
The final touch is cheese, I prefer lots of it, usually the Mexican blend, put a nice layer on top of the mashed potatoes.

Now stick it in the oven (maybe at 350?) since everything is already cooked you just need it in there long enough to heat up & melt that delicious gooey cheese.

Once your Mexican shepherds pie is all hot & cheesy take it out of the oven & cut into squares.

 I usually buy those round hard tortilla shells
& place the piece of shepherds pie on top, add a little hot sauce & you have the best comfort food ever!

I thought for sure I had a picture of the finished dish (cause I always take photos of food) but I don't :/

Slow-Cooker Pumpkin Pie & Speedway In Lights

Hello Lovelies,

 I hope everyone has had a great day, I spent the day relaxing with my whole family around the house, eating leftover Christmas dinner & then we headed out to the Bristol Motor Speedway for the Speedway in Lights. If you've never been there it really needs to be put on your bucket list! 
I didn't get the chance to take many pictures due to being in the back seat of a pick-up but I did get these pictures :)

I'm hoping we get to go back one more time this year. 
They have an open air sleigh (tram) ride that we're hoping to reserve & if we do I should be able to get some awesome photos of the lights. :)



As promised, here is the Slow-Cooker Pumpkin Pie recipe I promised...

Makes 5-6 servings 

Prep. Time: 10 minutes
Cooking Time: 3-4 hours
Cooling Time: 2-4 hours
Ideal slow cooker size: 3-qt.

15-oz. can solid-pack pumpkin
12-oz. can evaporated milk
3/4 cup sugar
1/2 cup low-fat buttermilk baking mix
2 eggs, beaten
1/4 stick (2 Tbsp.) butter, melted
1 1/2 tsp. cinnamon
3/4 tsp. ground ginger
1/4 tsp. ground nutmeg
whipped topping

1. Spray slow cooker with cooking spray.
2. Mix all ingredients together in slow cooker, except whipped topping.
3. Cover. Cook on Low 3-4 hours, or until a toothpick inserted in center comes out clean.
4. Allow to cool to warm, or chill, before serving with whipped topping. 

This recipe is delicious & sooo easy to make! 
You really should give it a try!
